Dice was very nice - and later on vbcc was pretty cool, too. In fact vbcc is so nice I used it for a toy CPU project a couple of years ago, because its backend interface is unusually well-documented and accessible. (I think tangling with either gcc or llvm would likely have added another six months to the project.)
